Jacob Hoskin
I first started cooking at 14 when I got a job as a kitchen hand. From then on I knew that that was the career path I wanted to follow. I began an apprenticeship with Neilsons in Traralgon when I was 17 and that is when I started my training at GippsTAFE.
The education that I received at GippsTAFE provided a great base for employment in any kitchen. All of the training was industry relevant and helped me develop skills and an extensive cooking knowledge that has lead me to some amazing opportunities.
With the support of GippsTAFE teacher Vince Fede, I was able to participate in the AUSTAFE Cookery Challenge. I competed in the state finals where I won gold in the categories of ‘First Year Apprentice’, ‘Best Victorian First Year Apprentice Overall’ and ‘Best Victorian Apprentice’. I then travelled to Darwin for the National Championships where I won gold as the ‘Best Apprentice Overall’. The whole experience was amazing and exposed me to all the possibilities cooking has to offer.
I went on to complete work experience at Peter Gilmore’s restaurant, Quay in Sydney. It is ranked 29 in the world and my experience there was amazing. I am now taking my cooking even further studying at the Academy Sofitel while I finish my apprenticeship. I know that without my GippsTAFE training I would not have the skills that I needed to take my career where it has gone.
From here I plan to finish my apprenticeship and studies at Academy Sofitel. I then want to move to Melbourne or Sydney to follow more cooking opportunities. I would love to go back to Quay and work there, but I am also interested in working in Melbourne at Attica or Vue De Monde in the Rialto.
The skills and knowledge I have from GippsTAFE have given me some amazing opportunities that have allowed me to work in some of the best kitchens in Australia. Choosing GippsTAFE has definitely been one of the best decisions I have made for my career.
